Stuffed Pasta with Stracchino Cheese, Rocket served with Pistachio Cream – Villa Schiatti

Pastry ingredients:

- 350 gr white flour

- 150 gr semolina (sweet corn flour)

- 5 eggs

-       little salt

Preparation:

Sift the flour and place on the work surface, then formed a hollow in the center and break one at a time eggs that have kept at room temperature, add the salt.

Starting from the inside, stir the eggs with a fork, taking as the flour from the edges, then worked with the hands the dough from the outside inwards, mixing all the flour that is located on the work surface. Continue to knead until the dough will not be smooth and compact. Therefore Wrap the dough in plastic wrap and let rest for about an hour in a cool, dry place.

Filling ingredients:

-          130gr stracchino cream cheese

-          40gr grated parmesan cheese

-           salt, black pepper , muscat nut

-          100 gr rocket salad

Preparation:

Prepare the filling for your ravioli, stirring in a bowl soft cheese, Parmesan cheese, arugula finely chopped, salt, pepper, and nutmeg.

Pistachio Cream ingredients:

-          100gr pistachio

-          200gr mascarpone

-          salt, black pepper

-          40gr grated parmesan cheese

Preparation:

Finely chop the pistachios, then add them to the mascarpone cheese with salt, pepper and Parmesan. The mixture should be thick and creamy.

At this point, roll out the dough and then with the tool notched obtained many squares of pasta. Put about a teaspoon of filling in the center of each square, then fold the dough in half and press it to weld the edges.

Bring salted water to a boil and pour the ravioli. Cook them until they come to the surface, about 4 min.

Drain the ravioli and in the meantime made melt in a pan the sauce with pistachio, with 2-3 tablespoons of fresh cream for cooking. Add the ravioli to the sauce, spread on a plate and then sprinkle with plenty of chopped pistachios, if you want with grated Parmesan cheese.

The dish is ready to serve.
