“Green Cake Surprise” Agriturismo “Mulino Vecchio del Cilone”

Pastry ingredients:

  • g. 120 of sugar
  • g.120 of butter
  • g. 300 of flour
  • 1 egg and 1 egg yolk
  • grated zest of half a lemon and its juice
  • half a teaspoon of baking powder

For the cream

  • g. 200 of sugar
  • g. 100 Almond
  • g.250 ricotta
  • 2 eggs
  • g.100 of spinach
  • 1 small glass of vin santo “Mulino Vecchio del Cilone”

Preparation:

Prepare the pastry by mixing a roll of sugar, eggs, butter, zest and lemon juice and finally the flour with the baking powder.

Knead until it forms a smooth ball, wrap it in a drape riposara and leave in the fridge for half an ‘hour.

Meanwhile boil the spinach and squeeze them well and pass them in a pan with a knob of butter. Allow to cool and then processing them.

Beat the egg yolks with the sugar, add the ricotta and vin santo, spinach and chopped almonds.

Finally the egg whites until stiff.

Roll out the dough into a loaf cake and pour the cream and bake in a hot oven for about 35/40 minutes at 180 degrees.

Garnish as desired, and ask your friends to guess the ingredient “X”, no one imagines that there are spinach inside.
