Ingredients for 4/6 people
1-1/12 KG Chianina beef (preferably ask sorra or supported)
2 carrots
1 onion
1costa of celery
1 clove of garlic
1 bottle of wine “Poventa” 2008, red wine Valdichiana Doc
Extra virgin olive oil (Olivolo) ½ cup
Salt and pepper q.b.

Preparation:

Cut the vegetables into pieces and place in a pan preferably earthenware to sauté with the olive oil. Once the vegetables have softened, add the meat, salt and pepper and cover with the wine Poventa (if necessary add a bit ‘of water). Cook over low heat for 2 hours. Serve with mashed potatoes or vegetables rehearse in a pan and a glass of “Poventa”.

The “Poventa” 2008 red Valdichiana DOC, is an important wine, suitable for long aging, warm and robust flavor is obtained with a long maceration.
Ageing: 12 months in tonneau and 12 months in bottle
