Celery striped with white sauce Chianina beef at Residence Le Santucce

Ingredients:

500 grams of celery striped Pasta Toscana,

300 grams of minced meat chianina of excellent quality,

a tablespoon of finely chopped onion,

a tablespoon of finely chopped celery,

extra virgin olive oil,

salt, pepper, white wine,

200 grams of cheese first salt raveggiolo of not more than two days

 

 

Preparation:

 

In a large frying pan pour the oil and fry the onion and celery finely chopped. When the onion is golden, add the ground meat Chianina, slowly cook the meat until it is well browned. Pour two tablespoons of white wine, once evaporated continue cooking for about an hour, adding water occasionally, or better yet, vegetable broth. Sprinkle with salt and pepper to taste. In a separate pan with boiling water, the pasta, cook until al dente sedanini ruled, drain and toss in the pan where you have prepared the sauce. This will bind optimally to the pasta sauce.
