The oil, in Arezzo, is a product of ancient yet modern . Cultivated by the Etruscans since the sixth sec. a.C., the olive tree is the best known of both the places that evokes both the symbolic values that are attributed to it since the earliest times . Its cultivation is complex and laborious and often not sufficiently profitable , but the work, attention and love that are dedicated to the olive tree are rewarded by a product, the oil Aretino and Castiglione, the qualitative characteristics that make it unique and irreplaceable . The oil is , along with the bread , the element that most characterizes a deli and a culture still strongly linked to rural tradition and its flavors. In her land of Arezzo , olive trees characterize the landscape. Harvesting is done manually and still the olives are pressed within a few hours , extra virgin olive oil of the hills of Castiglione is thus a true ” fresh fruit juice ” and as such a food with many beneficial properties for our lives .
