PORK IN THE CRUST OF BREAD WITH CRISPY BACON of Serristori

Ingredients for 4 people:
-2 pork fillets 300 gr each
-1 baguette
-About 40 slices of bacon seasoned
-rosemary
-Oil, salt and pepper q.b.

PREPARATION:
Place 2 pork fillets on a plate and drizzle with extra virgin olive oil, 1 pinch of salt and pepper, set aside, in the meantime, cut the baguette, prepare a sheet of wax paper and place the slices of bacon in front of a ‘on the other until you reach the length of the thread. Then put the pork fillets into the baguette and wrap them with the same freshly-cut bacon. Close everything with plastic wrap and cook in the refrigerator for a couple of hours. For cooking cut two washers high 2cm each, lay the fillets in a baking dish with a hint of rosemary, olive oil and pepper and cook for 12 minutes at 190 °. The thread will remain pink inside.
