It ‘a dish that was consumed in the extraction poor peasant families or those less well off. In recent years it has been revalued (also in the price!) And rediscovered as a delicacy.

Ingredients for 4 people

-500 grams of dried cod soaked or not soaked 350 grams of cod

-Extra virgin olive oil in abundance

-parsley

-garlic

-Pepe

-lemon

Preparation boiled codfish

• Soak the cod in cold water for 48 hours, changing the water frequently (alternatively buy dried cod soaked and hold to soak for 8 hours);

• Bring to a boil a pot of water and soak the salt cod. You heat over low heat for 10 minutes: boiling too strong could ruin the fish. Drain and cut into pieces not too large;

• Prepare a mixture of fine parsley and garlic;

• Season the cod with lemon juice, garlic and parsley previously and a sprinkling of pepper;

• Last touch, but of fundamental importance, adding plenty of EXTRA VIRGIN ORGANIC “The Crosticcia.”

At this point we just have to sit at the table and enjoy the fabulous dish.
